Biryani is indeed a perfect blend of luscious spicy cooked vegetables and layered long grained rice, fresh herbs, saffron, nuts and with generous amount of ghee. Serve this aromatic Biryani with raita of you choice.

Well exact origin of biryani is uncertain. but in India the flavor, the process of cooking vary state by state. hence there are many varieties of biryani like in Northern India there are muglai and Awadhi Biryani which are famous and like in Southern part of India Hyderabadi Biryani, Malabar Biryani or Thalassery Biryani and many more. All have their unique flavor and procedure of cooking.

Teaditonally, Dum Biryani is cooked in copper vessel or handi and is sealed with dough for dum and the entire rice and meat is cooked with the steam inside the handi. This way the Biryani is cooked perfectly.

Indeed, Biryani has always been favorite to all of us,if it's a chicken biryani, mutton biryani egg biryani, fish biryani or vegetable biryani(for vegetarians). Well biryani is all-time favorite to my husband. Chicken biryani and mutton biryani are customarily on my table every weekend. My husband is a biryani lover and i also crave for it at time or i should say everytime :P

let me tell you one thing plz don't get panicked seeing the long list of ingredients. Don't worry, it's absolutely easy and the outcome will definitely be magnificent.

Most importantly choosing perfect rice for biryani. The perfect rice for biryani is long-grained basmati rice. The more aged be the rice, the better will be the taste and aroma.

Let's not waste much time and make Vegetable Dum Biryani.


Vegetable Dum Biryani

Course Main Course

Cuisine Indian


Vegetables:

  • 1/4 cup cauliflower

  • 1/4 cup peas

  • 1/4 cup carrots sliced (size 1inch)

  • 1 potatoes sliced

  • 1/4 cup french beans

  • 1 capsicum


For Marination:

  • 1 cup curd

  • 1 tsp red chilly powder

  • 1/4 tsp turmeric powder

  • 1/2 tsp coriander powder

  • 1/2 tsp garam masala

  • 1/4 cup barista

  • 1/4 cup mint leaves

  • 1/4 cup coriander leaves

  • 1 tsp ghee


For Biryani Rice preparation:

  • 2 cups Basmati Rice

  • 1/4 tsp Shahee Jeera

  • 3-4 Cloves

  • 4 Cardamoms

  • 2-Bay leaves

  • 1 Mace Flower

  • 1 Star Anise

  • For Masala Preparation:

  • 1 Large Onion Sliced

  • 1 tsp Ginger Garlic paste

  • 2 tsp Biryani Masala

  • 1 tsp Ghee


For Layering:

  • Ghee

  • 1/4 cup Barista

  • 1/4 cup Mint Leaves

  • 1//4 cup Coriander Leaves

  • Saffron soaked in Lukewarm Milk



Instructions:

First wash and soak the basmati rice for 30 minutes.

heat a pan add water into it. Add all the spices mentioned above in "prepration for rice" ino the pan.

Add 1 tsp ghee into it. When water comes to boil drain the soaked rice and put it in the pan. Add salt into it.

Cook until 80% is done.

Heat ghee and oil in a pan.

Add onions and ginger garlic paste in a pan. fry till the onions are golden brown

Add turmeric powder, red chilly powder,coriander powder stir for 2 minutes. Add all the vegetables and mix well.

Add curd, biryani powder and salt in pan and fry for few seconds. Cover with a lid and let the vegetables cooked. when the oil get separated from gravy turn off the flame.

For layering

Add the cooked vegetables in a heavy bottom pan then layer the rice on top of it.

Drizzle some ghee on it. Sprinkle some barista,mint leaves and coriander leaves on top.

Repeat the layers. Cover the pan with a foil and place the lid on top of it.

Keep a flat pan on low flame. keep handi on top of it for 15-20 minutes.

Garnish it with some mint leaves and serve it with raita.
