Jini Dosa!

When we talk about fusion foods what comes in my mind is Mumbai street foods. I would say that Mumbai comes top of the list in that category as we get variants of snacks chaat and their regular food. And specially they make the regular food in various variations and dosa is one of that. I love variety of dosa like one of my favourite is Mysoore Masala. Later I'm definitely going to make this but first let try this delicious jini dosa.

Jini dosa is a stuffing of mix veggies like cabbage, carrots, capsicum and onion with aromatic pav bhaji masala mixed with tomato ketchup and loads of cheese. It's a famous Mumbai version dosa with a touch of pizza. In this all you have to do is to mix all the ingredients on top of dosa and let it cook on top of it and grate the cheese and it's done.

Talking about mumbai dosa there are varieties of dosa like schezwan dosa, nodle dosa, spring dosa, chinese dosa and many more.I love the way they play with ingredients and make it delicious, it really impressed me. I have posted masala dosa recipe for that you can check it out.




I make dosa very frequently because it's very convenient for breakfast when the dosa batter is ready.I mak different types of dosa which mainly differ with thickness and size. Then I tried this Jini and in first attempt it worked. All you have to do is use optimal stuffing, don't over do it it won't taste good and rolling might be difficult.

There are some tips while preparing- firstly Donot over-stuff the dosa and keep it simple and minimum. Secondly, make sure the stuffing should be moist not too dry. This will help to maintain moisture with dosa and dosa won't get burned.


How to make Jini Dosa:



Ingredients:

  • Dosa batter

  • 1 tsp Butter

  • 2 tsp onion sliced

  • 2 tsp capsicum sliced

  • 2 tsp cabbage (optional)

  • 1/2 tsp schezwan sauce

  • 2 tsp tomato sauce

  • 1/4 tsp pav bhaji masala

  • pinch salt

  • cheddar cheese grated (as much you wanted)

  • 2 tsp spring onion


Instructions:


  1. Pour a ladle full of dosa batter on top of hot dosa pan and spread gently making a nice round shape.

  2. Simmer the flame and allow dosa to cook.

  3. Now rub butter evenly on top of dosa. Further add all the veggies .

  4. Add schezwan sauce, pav bhaji masala, ketchup, butter and a pinch of salt.

  5. Mix well gently and spread it covering entire dosa.

  6. Cu the dosa with pizza cutter or knife into thin strips.

  7. Grate cheese on top of it uniformly. When cheese melts completely scrape the dosa strips and roll it.

  8. Serve jinni dosa with some more cheese on top.
